Pistachio Pesto

Yes, pistachios went on sale! Making me some pesto… Pesto means to pound or crush so those of you with a pestle and mortar, pound away! Everyone else, grab your food processor and let’s get crushing.

 Pistachio Pesto

1/2c pistachio nuts

1 bunch parsley

2 cloves garlic

1/2t salt

1/4t pepper

1/2c parmesan (optional)

1/2c extra virgin olive oil

  In food processor add nuts, parsley, garlic, cheese, salt, and pepper. Pulse to make small pieces. Then, while the processor is running add the olive oil a drizzle at a time.  Be sure to scrape down the side of the bowl to get it all blended.

Is this thick for you? Feel free to add a little more olive oil until you get the consistency you like. But I encourage you to follow the recipe one time and then start making adjustments.
